Meet Jess Pryles, a self-confessed ‘Hardcore Carnivore.’ She’s a writer and TV personality, a cook specialising in red meat, with a passion for grilling and Southern food. She’s also a respected authority on Texas and competition-style barbecue. If that's not enough, Jess is also a co-founder of the Australasian Barbecue Alliance and a Celebrity Judge on Channel Seven’s Aussie Barbecue Heroes. Born and raised in Australia, she found her spiritual home in Austin, Texas, where she now resides. Luckily for us, Jess is flying over for the Festival to host the Demonstration stage and teach us a thing or two about BBQ!
Meet Hillbilly Wes, perhaps Australia's most authentic barbecue icon! His love of Texas-style ‘low and slow’ barbecue was founded in Lockhart, Texas, where he was mesmerised by the sites and tastes of real barbecue. Spending time in Austin, learning from some of the best in the barbecue business, and catering in the Sydney area for a couple of years, has prepared Wes well for his latest venture – a restaurant with friend Anton Hughes, called Bovine and Swine Barbecue Co. Wes will be showing you how to grill a whole-hog at the Festival, a spectacle not to be missed!
The Shank Bros are a Brisbane-based BBQ collective made up of passionate blokes who love to cook ‘low and slow’ over a few cold beers. You might recognise co-founders Mike and Ralph from Channel Seven’s Aussie Barbecue Heroes – they took out the top spot on the reality show, where they served the best “wham bam thank you lamb!” according to judge, Robert Murphy. The Shank Bros core focus revolves around learning the craft of how to cook great barbecue, sharing ideas, techniques and building new friendships. During the Festival, The Shank Bros will be in competition mode, but this won't stop them from enjoying the social side of simply hanging out and having a yarn. Ask nicely, and they might share a cheeky recipe or two!
Whether you’re into charcoal or gas BBQs, the legendary flavour achieved by cooking on a Weber BBQ is known the world over. The team at Weber will be demonstrating expert grilling techniques on a range of their products, and the team will be on hand throughout the day to share tips, field questions, and provide advice on the best products for your own barbecue experiments at home.
If only there were more people in the world like Billy Gibney. Warm, easy-going, and forever ready with a friendly smile (and a cheerio for the kids). The owner of iconic Ashgrove butcher Meat at Billy’s has been spruiking his meaty wares for just under five years. Billy and his team will be breaking down a whole pig – Nose to Tail – while educating the audience on butchering techniques, explaining each cut and how best to use them on your BBQ.
Made up of Butchers from around Australia, The Steelers Butchery team are the Australian representatives competing in the 2016 World Butchery Challenge at the Gold Coast this September. We’ll get a sneak peak at their skills with the clever when they break down and entire lamb with ease, explaining how each cut may be used. The Steelers are sure to impress.
Here's your opportunity to get up close and personal with some of the best Pitmasters in Australia. A panel of barbecue aficionados will be hosting a live Q&A session where you can chime in and ask your burning questions or just sit back and listen in – you still might learn a thing or two!

This is your opportunity to speak with some of Australia’s leading farmers, retailers and purveyors to find out more about where your meat comes from. Our expert panel will be available to answer questions and provide information on the process of paddock to plate.

Aussie BBQ's and industry representatives will be demonstrating Pro Q, Bradley Smokers and Yoder Smokers all day during the Festival, make sure you pop by for a chat.
Two things that often go hand-in-hand are good music and good food. This is something Brisbane local Trent Wildman, better known by his alter ego DJ Cutloose, has been experimenting with through his Cut and Cook events. Now, he’s bringing it to the Festival. Essentially an informal cooking show, DJ Cutloose talks through his recipes with the audience while mixing tracks and having a good time. The climax of the show culminates in the presentation of the dishes he’s been cooking to those lucky enough to be in attendance.
